I keep getting ignored in game whenever I ask so I'm going to try here :/

1. I'm trying to breed my Slowpoke which is not galarian, but the eggs always turn out galarian for some reason. Why is that?

2. Is Dark/Fairy Zoroark supposed to have adjusted base stats as the ones listed in the wiki, because my Zoroark does not have the base stats listed there but rather the original dark type zoroark stats.

Just chance-based.

The custom form Zoroark does not have different base stats. I'll make sure this will be corrected
